Although I have modified the recipe over the years this remains relatively true to the original Morgan family comfort food.

Swiss Steak- Grandpa Morgan Style 1 Picture

Ingredients

  • For Dusting Meat
  • 1/2 cup flour
  • 1 tbs garlic pepper OR 1/2 tbs each black pepper and garlic powder
  • For Swiss Steak
  • 1 round steak (approximately 1 1/2 pounds) or equivalent Tri Tip
  • 2 teaspoon sweet paprika
  • 2 teaspoons Hungarian paprika
  • 2 tbs garlic pepper
  • 1/2 tbs vegetable oil
  • 6 cloves garlic, crushed
  • 2 tsp garlic powder
  • 1 (14-1/2 ounce) can diced tomatoes
  • 1 (28 ounce) can diced tomatoes
  • 2 medium onion, cut into strips
  • 2 medium bell pepper, cut into strips
  • 1 1/2 cups beef broth
  • 2 tsp salt
  • 2 tsp pepper
  • (NOTE: IF USING LEAN MEAT{Tri Tip etc} USE 1/2 CAN BEEF BROTH)

Step 1

Cut steak into serving-size pieces (2" x 3" x 1/2"). Dust meat with spiced flour. In dutch oven, brown both sides of meat in vegetable oil. Transfer to Dutch oven. Combine garlic, tomatoes, beef broth, onion, bell pepper, salt and pepper. Pour over steak and simmer over low heat until meat is tender, about 1 1/2 hours adding water, if necessary to keep meat partially covered. Season, to taste, with additional salt and pepper.

Serve with/over mashed potatoes with Chianti or Sangiovese.

Hint: Cook this in a slow-cooker, according to manufacturers instructions, on low for a most fabulous dinner. Low heat on a slow cooker is about 200 degrees F and high heat on a slow cooker is about 300 degrees F.
