Ingredients
- 1/4 lb. butter, melted (1 Stick)
- 2 TBS. Lemon Juice
- 1 TSP. Minced Parsley
- 30 Ritz Crackers, finely crushed
- 20 Jumbo Shrimp, cleaned, butterflied
Preparation
Step 1
Combine melted butter and lemon juice. Combine parsley and cracker crumbs; gradually add leon butter to crackers until you have a moist consistency. You won't need all the lemon butter. Place a tablespoon of stuffing on each shrimp; pour remainder of the lemon butter over the shrimp in a shallow baking dish. Bake at 375 for 20 minutes.
