Leftover mashed Potato Patties

Good way to use up any leftover Mashed Potatoes....good with Chicken,Meatloaf,,,or a midnight snack.

Ingredients

  • Approx. 2 cups leftover Mashed Potatoes ( room temp )
  • 1 egg
  • breadcrumbs or crushed Saltine type crackers....about 1/2 cup..I eyeball it!
  • any seasoning you like,,,,i.e.
  • seasoning or garlic salt, Black Pepper, Spinach or Basil leaves....use your imagination.
  • cheese can be a nice filling too.

Step 1

1.ok...add egg and crumbs to potatoes to make them at least stick together. add in whatever spices you like. form into small "snowball" size balls...and flatten slightly on a sheet of waxed paper with your fingertips( gently). This should make about 5-6...but you can make any amount or size you like...depending on how many potatoes you want to use up.
2.in a heavy skillet,,,,add a large scoop of 'butter flavored' Crisco shortening...
3.VERY carefully slide each patty into the melted grease...with alittle space inbetween each for browning. Salt and Pepper the outsides if desired. Let brown at least 10-15 mins. on the first side before attempting to turn-over patty. when the bottom is nice and golden,,,flip with spacula very slowly and careful not to splash the hot grease. repeat the browning on second side. Serve HOT with ketchup.
