Ingredients

  • 1 1/2 Ibs. flank steak
  • 2 Tbsp. oil
  • 1/4 cup shallots or white onion, chopped
  • 1/2 cup red wine
  • 3/4 cup whipping cream
  • 1/2 cup Blue cheese. crumbled
  • 1 1/2 Tbsp. Dijon-style mustard 1 tsp. tomato paste
  • 2 Tbsp. minced parsley

Preparation

Step 1

1 Thinly slice flank steak against the grain into 1-by-3-inch slivers.
2. Saute steak in hot oil in small batches until browned on the outside. but still pink on the inside.
Remove from the pan. Keep warm.
3. Heat 1 tablespoon of the remaining oil in the pan. Saute shallots or white onion until soft and caramel
colored. Deglaze pan with red wine, scraping up brown bits.
4. Cook, reducing wine to about 3 tablespoons.
5. Stir in whipping cream, Blue cheese and mustard. Cook over medium heat until hot and thickened.
6. Add tomato paste. Return flank steak to sauce. Heat through.
7. Serve over mashed potatoes. Sprinkle with parsley. Serve immediately.
