Aloo Gobi

Ingredients

  • 3 3 3 tbsp vegetable oil
  • 1/2 1/2 1/2 tsp cumin seed
  • 1 1 1 small onion, chopped
  • 2 2 2 Serrano peppers, minced
  • 1 1 1 tsp ginger paste
  • 2 2 2 tsp coriander
  • 1/4 1/4 1/4 tsp paprika
  • 1/2 1/2 1/2 tsp turmeric powder
  • 1/2 1/2 1/2 tsp cayenne pepper
  • 1/2 1/2 1/2 tsp garam masala
  • 2 2 2 medium potatoes, peeled and cubed
  • 1 1 1 tsp salt
  • 1/2 1/2 1/2 head cauliflower, chopped
  • 2 2 2 tsp lemon juice

Preparation

Step 1

Heat 2 tbsp of the oil in a large pot over medium-high heat. Fry the cumin seeds. Stir in onion and cook until tender. Stir in pepper and ginger and cook for 1 minute. Season with coriander, paprika, turmeric powder, cayenne and garam masala and cook for 1 minute.

Add the potatoes and salt and cook for 5-7 minutes. Add the cauliflower, cover and cook for 20 minutes, stirring occasionally to prevent burning.

Stir in the lemon juice then pour the remaining 1 tbsp of oil around the edges of the pot. Cook for 3-5 minutes more being careful not the mash the cauliflower.
