Minestrone Soup 2

Step 1

In a saucepan, cook butter, onion and bacon until browned. Combine carrots, celery, garlic and 2 cups water in blender and blend for 30 seconds. Add this to the bacon mixture. Add tomato paste, beef bouillon, 2 1/2- quarts water, salt, and pepper. Bring to a boil and then simmer for 3 hours. One-half hour before done, add vegetables, pasta and spinach. Right before serving, sprinkle Parmesan cheese and croutons over top.
