  • Boneless, skinless chicken breasts
  • Italian Bread Crumbs
  • Parmesan Cheese
  • Flour
  • Eggs
  • Spaghetti sauce
  • Mozzarella cheese
  • Olive Oil

Preparation

Step 1

Pound chicken to about 1/4 inch thick. Roll chicken in seasoned flour. Dip chicken in beaten egg, then roll in bread crumbs. Fry chicken in small amount of olive oil, about 1 minute per side - DO NOT OVERCOOK! Place layer of spaghetti sauce on bottom of casserole pan. Place chicken on spaghetti sauce, pour more spaghetti sauce over chicken and grate Mozzarella cheese on top. Back at 350 degrees until dish is hot and bubbly.

Chicken fillets can be fried in advance and placed in refrigerator - assemble with sauce and cheese right before dinner.
