Vegetable Avocado Saute

Ingredients

  • 1 1/2 T oil
  • 2 t garlic, finely chopped
  • 1/2 large shallot, finely chopped
  • 1 1/2 t fresh thyme
  • 3 zucchinis, cut lengthwise, sliced 1/4 inch thick
  • 1/2 red bell pepper, cut into 1 inch squares
  • 1 T grated lemon peel
  • 1 1/2 T lemon juice
  • 1 Haas Avocado, peeled and cut into chunks

Preparation

Step 1

1) Saute garlic, shallot, and thyme.
2) Add zucchini, pepper, and lemon peel. Cook 4 min. covered.
3) combine lemon juice with avocado in a small bowl and add to the skillet. Cook 2 min.
