Tilapia w/Sauteed Green Beans & Grape Tomatoes

Ingredients

  • 1/4 lb trimmed green beans
  • 4 (5-6 oz each) tilapia fillets
  • flour
  • 2 T olive oil
  • 2 T butter
  • 2 tsp shallots, chopped
  • 2 tsp thyme, chopped
  • 1 pkg. grape tomatoes

Preparation

Step 1

1. Cook green beans - set aside

2. Coat tilapia with flour and lightly brown in skillet with olive oil - 1-2 min. each side. Reduce heat and cook another 3-5 minutes.

3. Add butter, shallots and thyme to pan. Melt and blend but do not burn butter. baste and continue to cook another 2-3 min.

4. Remove tilapia from pan. Add green beans and tomatoes to pan and saute for 30 more seconds
