Ingredients

  • 4 cups shreddeed cooked chicken

  • 1 1/2 cups chopped red onion

  • 1 (160z) pakage frozen corn

  • 2 cups shredded monteray jack cheese

  • 1 cup fat free sour cream

  • 1 tsp. ground cumin

  • 1 tsp. chili powder

  • salt and pepper to taste

  • 2 cups mild salsa

  • 3 cups enchilada sauce

  • 16 flour tortillas

  • 1 bunch green onions

Directions

Mix first group of ingredients. Toast tortillas in pan for 5-10 seconds each side, then fill with mixture. Bake at 350' for 30-40 minutes, or until heated through.
