Ingredients

  • 284mL can chicken broth
  • 1-1 1/2 tsp thai red curry paste
  • 398 mL can coconut milk
  • 1/3 cup water
  • 1 tsp each corriander and salt
  • 2 red peppers, chopped
  • 1 onion, chopped
  • 1 1/2 cups uncooked rice
  • 340g bag peeled, cooked shrimp
  • juice of one lime

Preparation

Step 1

Put first 9 ingredients in crock pot, 3 hrs on high 5 on low. Add shrimp, turn crock pot to high, cook about 30 minutes or until shrimp are hot. Do not overcook. remove from heat, stir in lime juice, serve.
