Ingredients
- 284mL can chicken broth
- 1-1 1/2 tsp thai red curry paste
- 398 mL can coconut milk
- 1/3 cup water
- 1 tsp each corriander and salt
- 2 red peppers, chopped
- 1 onion, chopped
- 1 1/2 cups uncooked rice
- 340g bag peeled, cooked shrimp
- juice of one lime

Preparation
Step 1
Put first 9 ingredients in crock pot, 3 hrs on high 5 on low. Add shrimp, turn crock pot to high, cook about 30 minutes or until shrimp are hot. Do not overcook. remove from heat, stir in lime juice, serve.
