  • 4 MountainKing® Jumbo Russet Potatoes

  • 1 pound ground beef or turkey

  • 1 package sloppy joe seasoning

  • 1¼ cup water

  • 1 can tomato paste (6oz)

  • 2 cups cheddar cheese, shredded

  • 1 cup white onion, chopped


Wash and dry potatoes. Place potatoes in the microwave (2 at a time) and cook on high 10 minutes or until easily pierced with a fork. Meanwhile, in a skillet over medium heat, brown meat; drain fat. Add sloppy joe seasoning packet, water and tomato paste; cook 10 minutes. Place potatoes on a baking sheet. Cut open and fill each with meat mixture. Top each potato with onion and cheese. Serve immediately.
