Ingredients

  • 1 pie

  • 7 tbls. cornstarch

  • 1½ cups sugar

  • ¼ tsp. salt

  • 1½ cups hot water

  • 3 egg yolks beaten

  • ½ cup lemon juice

  • 1 tsp. lemon peel

  • 2 tblsp. butter

  • 2 pies

  • 14 tablespoons cornstarch

  • 3 cups sugar

  • ½ tsp. salt

  • 3 cups hot water

  • 6 egg yolks beaten

  • 1 cup lemon juice

  • 2 tsp. lemon peel

  • 4 tbls. butter

Directions

Mix first four ingredients, cook 6-8 minutes stirring constantly until thick and clear. Remove from heat. Add 1/4 cup to the egg yolks, mix and put back into pan. Cook about 6 minutes more, stirring constantly on low heat. Remove from heat, add butter, juice and peel. Stir well and pour into cooked crust. MERINGUE 3 egg whites 1 tsp. lemon juice 6 tbsp. sugar Beat whites and juice until soft peaks form. Add sugar and beat until stiff. Bake at 350* 15-20 min. to brown meringue. cool and refrigerate
