Ingredients

  • 4 c cubed grilled eggplant
  • 2 cans chickpeas
  • 1 c cherry tomaties, cut crosswise
  • 1 T finaly chopped parsley
  • 2 T red wine vinegar
  • 2 T olive oil
  • 1 T lemon juice
  • 2 cloves garlic, minced
  • 1/2 t lemon zest
  • 1/4 t pepper

Step 1

Toss eggplant, chickpeas, tomatoes and parsley in bowl

Whisk vinegar, oil, lemon juice, garlic, lemon zest, and pepper. Pour over salad and toss.
