Ingredients
- 4 c cubed grilled eggplant
- 2 cans chickpeas
- 1 c cherry tomaties, cut crosswise
- 1 T finaly chopped parsley
- 2 T red wine vinegar
- 2 T olive oil
- 1 T lemon juice
- 2 cloves garlic, minced
- 1/2 t lemon zest
- 1/4 t pepper

Preparation
Step 1
Toss eggplant, chickpeas, tomatoes and parsley in bowl
Whisk vinegar, oil, lemon juice, garlic, lemon zest, and pepper. Pour over salad and toss.
