Roasted Potato Salad

  • 2 t. olive oil
  • 2 lbs. small red potatoes,
  • diced
  • 1/2 medium sweet onion
  • 2 t. minced garlic
  • 1 t. coarse salt
  • 1/2 t. ground pepper
  • 8-10 slices cooked bacon, crisp
  • 1 bunch green onions
  • 3/4 cup Ranch dressing

Cooking time 50mins


Step 1

Place oil on jellyroll pan. Add potatoes and next 4 ingredients, tossing to coat. Add a little olive oil to potatoes. Arrange in single layer on pan. Bake 30-35 minutes in 425 degree oven until crispy brown turning occasionally. Transfer to bowl. Toss together potatoes, bacon, green onions and dressing. Salt and pepper to taste. Serve warm or cold.
