Ingredients

  • 4.5 oz bittersweet chocolate, finely chopped

  • 2 tbsp unsalted butter

  • 2 tbsp espresso

  • 1 cup cold heavy cream

  • 3 eggs, separated

  • 1 tbsp sugar

Directions

Combine chocolate, butter, and espresso in the top of a double boiler over hot water, stirring until smooth. Remove from heat and let cool slightly, until chocolate is room temp. Meanwhile, whip cream to soft peaks, then chill. Once chocolate is cooled, whip egg whites until foamy and begin to hold shape. Sprinkle in sugar and beat until soft peaks form. Stir yolks into chocolate after cooling. Gently stir in 1/3 of whipped cream. Fold in half the whites, until just incorporated. Then fold in rest of whites, and finally the rest of the cream. Spoon mousse into individual dishes or serving bowl. Refrigerate at least 8 hours.
