Shrimp Cristoforo, The Olive Garden's

Ingredients

  • 3/4 cup basil, chopped
  • 1 1/4 sticks butter
  • 1 tablespoon garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 tablespoons Parmesan cheese
  • 1 tablespoon Romano cheese
  • 1 pound angel hair pasta
  • 1 pound shrimp, peeled and deveined
  • Parmesan cheese for garnish

Preparation

Step 1

Remove any large stems fro the basil and wash the leaves, Shake off excess water and dry with paper towels. Place in a food process with a blade attachment. Process until finely chopped. Remove from the processor and set aside.

Place the softened butter in a medium bole. Using a whisk or electric mixer, whip the butter until pliable. Add the chopped basil, garlic, salt, pepper, Parmesan and Romano cheeses. Mix until well incorporated. (the basil mixture can be stored, covered, in the refrigerator for 3-4 days.)

Cook the pasta according to package directions. Drain well and keep warm.

Melt the basil butter in a large skillet over medium heat. Add the shrimp and saute until just done, about 3-4 minutes. Pour over the pasta and mix to coat.

Serve with the additional Parmesan cheese and your favorite crispy bread.
