Oyster Bisque

Ingredients

  • 1 pint oysters (or one 8 oz can)
  • 2 T celery, chopped
  • 2 T onion, chopped
  • 4 T butter, melted
  • salt, pepper, parsley to taste
  • 1/3 C flour
  • 1/4 t paprika (I used smoked)
  • 3-4 C milk

Preparation

Step 1

In 1 quart saucepan, bring oysters to boil and cook until edges curl. In 2 quart saucepan, cook celery and onion in melted butter until tender. Blend in flour and seasonings. Add milk slowly. Stir constantly. Add drained oysters. Heat until serving.
