Ingredients
- 1 envelope unflavored gelatin
- 1 cup sugar
- ½ t salt
- ½ t cinnamon
- ½ t nutmeg
- ¼ t ginger
- 2 egg separated
- 1 1/2 t Orange Zest
- 1 c evaporated milk
- 1 can pumpkin
- 1 prebaked pie shell

Step 1
Combine everything except 1/2 c sugar, eqq whites and pumpkin and Cook over low heat, stirring constantly until thickened. Chill until mixture just begins to set and is barely cool. Stir in one 1 lb can pumpkin. Set aside. Beat 2 egg whites until stiff. Gradually add 1/2c sugar, continuing to beat until stiff and glossy. Fold into pumpkin mixture.
Spoon into Prebaked pie shell.
Prebake pie shell at 450 for 8 to 10 minutes.
Chill until set.
