Aunt Ann's Sweet Potato Casserole

Ingredients

• 6 lbs sweet potatoes
• 1/2 cup unsalted butter
• 2 Tbs brown sugar
• 2 tsp grated lemon peel
• 2 tsp grated orange peel
• 2 eggs beaten to blend
• 1 3/4 cup coarsely chopped pecans (toasted)

Preparation

Step 1

Mash potatoes and combine all ingredients, and leave some pecans for the top. Bake at 350 for one hour and 15 minutes.
