Veggies: Harvest Potatoes

  • 9 Fingerling Potatoes
  • 2 Tbsp Safflower oil
  • 1/2 tsp salt
  • 1 pinch black pepper
  • 1 tsp thyme
  • 1 1/2 tsp oregano
  • 1 tsp chives, chopped


Servings 4


Step 1

Wash potatoes in cool water and pat dry. Slice potatoes into 1/2 inch slices. Heat oil in a saute pan and carefully add the potatoes. Be sure the oil is hot before adding the potatoes. Pan-fry the potatoes over medium-high heat. Season with salt and pepper. Stir the potatoes occasionally for 8-10 minutes or until the potatoes are tender and golden brown. Add the fresh herbs, lower the heat to medium, and cook for an additional 2 minutes before serving.
