Flour Tortillas

Ingredients

  • 2 cups bread flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup shortening or lard
  • 3/4 cup hot (115-130F) water

Preparation

Step 1

Combine all ingredients in a large bowl and mix by hand or on low speed until dough comes together. Knead by hand or with a dough hook on low speed until smooth, 4-6 minutes.

Divide dough evenly into 8 pieces and roll into balls. Cover and rest for 20 minutes.

Roll out each ball into a 6-8 inch round about 1/4 inch thick. Heat a large cast-iron skillet over medium heat. Cook one tortilla at a time, cooking until brown spots appear, about 30 seconds on the first side, 15 second on the second.
