Apple Pancake

  • 1/4 cup butter
  • 2 tbsp plus 1/4 cup sugar
  • 1 tsp cinnamon
  • 3 apples peeled , cored and sliced in 24 thin wedges (use tart apples)
  • 4 eggs separated
  • 1/3 cup flour
  • 1/2tsp b.powder
  • 1/8 tsp salt
  • 1/3 cup milk



Step 1

Melt butter in 10 inch skillet or round oven proof dish in pre-heated 400F
Stir together 2 tbsp sugar and cinnamon.Spread evenly over melted butter.
Top with apple slices and return to oven and bake 10 min.
Beat egg whites until foamy. Beat in remaining 1/4 cup sugar, 1 tbsp at a
time until soft peaks form
In small bowl mix flour, b.p. and salt.
In large bowl blend yolks and milk with beater. Stir in flour mix until just
blended. Fold in egg whites.
Spread batter evenly over top of apples and bake for 20 min or until golden
brown and baked through.
Run knife around edges to loosen. Invert on to serving plate. Serve warm
with sausages and maple syrup. Serves 4-6.
