Nanny's Rolls

Nanny used to make these rolls for every occasion. Everyone loved them including Mark. She made up this recipe for me as her directions were all about “feel” and no exact amounts. It became a favourite tradition at our house for holidays as it wasn’t Christmas, Easter or Thanksgiving unless you could smell rolls in the oven. I still have Nanny’s handwritten two-page directions.

Ingredients

  • 3 cups warm milk and water (1/2 and 1/2)
  • 1/2 cup sugar
  • 1 package Fleischman's dry yeast (2 1/4 tsp.)
  • 1/2 cup melted margarine
  • 1 tsp. salt
  • 6 cups flour or more or less

Preparation

Step 1

Mix milk, water and sugar. Over top of this mixture sprinkle 1 package of yeast. Let stand for 10 minutes. Do not stir.
Add margarine, salt and flour. You have to judge the quantity of flour by the feel of the dough. You have to be able to knead it without it sticking to your hands. You can grease your hands, the table and the container with margarine so the dough is easier to handle.

Set them to rise where warm until dough doubles in size. Punch down lightly. Let rise again then put in greased muffin tins. Let rise until double in size again. Bake at 375 degrees for 10-12 minutes. Don't overcook. Makes about 3 dozen.
