Black Bean Salsa

This is the recipe I orginally got from Chris's grandmother, Mel.

Ingredients

  • 4 cups cooked black beans
  • 2 cups cooked corn kernels
  • 1 red, yellow or orange bell pepper, finely chopped
  • 2 limes
  • 2 large garlic cloves or 1 tsp. powdered garlic
  • 1/2 bunch green onions/scallions
  • 1 tsp cilantro (dry) or fresh to taste
  • 1/2 cup extra virgin olive oil (or also to taste)

Preparation

Step 1

Combine all ingredients and salt and pepper to taste.
