Ingredients
- 1/3 C. peeled, diced cucumber
- 2 T. white vinegar
- 4 C. cooked elbow macaroni (cooked without salt)
- 1/2 C. chopped green bell pepper
- 1/3 C. thinly sliced celery
- 1/4 C. sliced green onions
- 1 (2 oz) jar diced pimiento, drained
- 1/4 C. reduced calorie mayonnaise
- 1/2 C. plain lowfat yogurt
- 3/4 t. dry mustard
- 1/2 t. salt
- 1/2 t. dried whole dillweed
- 1/8 t. pepper
Preparation
Step 1
Combine cucumber and vinegar in a medium bowl; let stand 30 minutes. Add macaroni and next 4 ingredients; toss well. Combine mayonnaise and next 5 ingredients; stir well. Add to macaroni mixture; toss gently to coat. Cover and chill.
