Ingredients
- For vegetable stock:
- 1 onion medium size
- 1 carrot medium size
- 2 inch piece of celery
- 4-5 mushrooms
- 1 tsp oil
- Salt to taste
- For soup:
- 1/4 cup finely chopped carrots
- 1/4 cup green peas
- 1/2 cup finely chopped cabbage
- 1/2 cup cauliflower chopped
- 3 cups vegetable stock
- 1 tbsp coriander leaves chopped
- Freshly ground black pepper powder
- Salt to taste

Preparation
Step 1
For vegetable stock:
1. Heat oil in a deep non stick pan.
2. Add onion, carrot & saute on high heat.
3. Chop celery, quarter 4-5 mushrooms, add & stir.
4. Add salt & plenty of water, mix well, boil for ½ hour.
5. Strain & use when required.
For soup:
1. Boil 3 cups vegetable stock in a deep non stick pan.
2. Add cabbage, cauliflower, peas, carrot & cook for 2-3 mins.
3. Add salt, pepper powder & let it boil for 2-3 minutes.
4. Pour into soup bowls.
5. Garnish with coriander leaves, serve hot.
