Ingredients

  • For vegetable stock:

  • 1

    onion medium size

  • 1

    carrot medium size

  • 2

    inch piece of celery

  • 4-5

    mushrooms

  • 1

    tsp oil

  • Salt to taste

  • For soup:

  • 1/4

    cup finely chopped carrots

  • 1/4

    cup green peas

  • 1/2

    cup finely chopped cabbage

  • 1/2

    cup cauliflower chopped

  • 3

    cups vegetable stock

  • 1

    tbsp coriander leaves chopped

  • Freshly ground black pepper powder

  • Salt to taste

Directions

For vegetable stock: 1. Heat oil in a deep non stick pan. 2. Add onion, carrot & saute on high heat. 3. Chop celery, quarter 4-5 mushrooms, add & stir. 4. Add salt & plenty of water, mix well, boil for ½ hour. 5. Strain & use when required. For soup: 1. Boil 3 cups vegetable stock in a deep non stick pan. 2. Add cabbage, cauliflower, peas, carrot & cook for 2-3 mins. 3. Add salt, pepper powder & let it boil for 2-3 minutes. 4. Pour into soup bowls. 5. Garnish with coriander leaves, serve hot.
