Ingredients
- 1 lb ground beef
- 1 package Jiffy corn muffin mix
- 1 egg
- 1/3 cup milk
- 1 package taco seasoning
- 1/4 cup onion, chopped
- 3 cloves garlic, minced
- 1 can stewed tomatoes
- 1 can corn
- 1 cup Colby/jack cheese

Preparation
Step 1
Preheat oven to 400 degrees. Prepare a 9x13 dish with cooking spray.
Brown beef in a large skillet. Add onion and cook until softened. Add the garlic and cook 1 minute longer. Add the taco seasoning and stir until the beef is coated.
In a large bowl, combine the Jiffy mix, egg and milk. Stir until combined. Add the beef to the Jiffy mix and stir. Drain the tomatoes and corn. Add the tomatoes, corn and cheese to the beef mixture.
Pour mixture into the prepared dish. Bake for 40 minutes or until the top is golden brown.
