Chipotle Shrimp

  • 1.5 # shrimp
  • 1/4 t pepper
  • 1/8 t sugar
  • 2 scallions
  • 1 or 2 limes
  • cilantro
  • 1 chipotle pepper plus 2 t adobo
  • 4 t light brown sugar
  • 2 T olive oil



Step 1

peel and devein shirmp
leave tails on if shrimps are going to be eaten like an app
place in a bowl and toss with salt pepper and sugar
trim off scallion roots
cut white and light green parts lengthways
and cut in thin slices
squeeze lime to get 2 T
chop cilantro - 3 T
mince chipotle
and all together with adobo, brown sugar

cook shrimp in a single layer for 2 minutes
remove the skillet from heat and turn shrimp over for 30 seconds in hot skillet
add sauce to shrimp - cover and let stand for 2 minutes
then serve
