Ingredients

  • 1/2 cup butter or margarine
  • 1 cup boiling water
  • 1 cup sifted all-purpose flour
  • 1/4 tsp salt
  • 4 eggs
  • 1 pkg instant vanilla pudding
  • 1-3/4 cup milk
  • CHOCOLATE FROSTING
  • 1/2 square unsweetened chocolate
  • 1 tsp margarine
  • 1/2 cup powdered sugar
  • 1 tbsp hot water

Preparation

Step 1

Using large saucepan, melt butter in boiling water. Add flour and salt; stir vigorously. Stir until mixture forms ball that doesn't separate. Remove from heat; cool 5 minutes. Add eggs one at a time beating vigorously after each until smooth.

Shape into 8 oblong (4x1 inch) size. Bake at 400F for 30-35 minutes.

Make pudding according to directions using 1-3/4 cup milk. Cover and chill.

Using sandwich bagie, place pudding into it. Cut a small hole in the end of eclair and baggie. Pipe pudding into center of eclair and frost with chocolate frosting.

CHOCOLATE FROSTING
heat chocolate and margarine in a double boiler until melted. Remove from heat and stir in sugar and water. Stir until smooth but not stiff. Spread on top of eclairs.
