Lasagna

One of my favorite lasagna recipes. The cottage cheese is so unexpected but still yummy.

Ingredients

  • 1 lb ground beef

  • 1 large onion, chopped

  • 1 can (16 oz) tomatoes

  • 1 clove garlic, minced

  • 1 tsp oregano

  • 1 tsp salt

  • ¼ tsp pepper

  • ½ lb lasagna noodles

  • 2 eggs

  • 1 can (8 oz) tomato sauce

  • 1 can (6 oz) tomato paste

  • 2 cups cottage cheese

  • 1 lb mozzarella, grated

Directions

Cook onion and meat together unitl onion is clear and meat loses its pink color. Drain Add in the tomatoes, garlic, oregano, salt, pepper, tomato sauce, and the tomato paste. Bring to a bubble and reduce heat to simmer for about 30 minutes. Taste and adjust the salt and pepper. Continue to let it simmer while preparing the rest of the meal. Take the 2 eggs and mix in with the cottage cheese. Mix well. In a large pot bring water to a boil and then add salt. Add the noodles and cook according to the package directions. After noodles are done take a lasagna pan and put a third of the sauce and place in the bottom. Then add a row of noodles. Then place half the cottage cheese mixture on top of the noodles. Then put half of the mozzarella on top of the cottage cheese mixture. Then put half of the sauce, followed by noodles, cottage cheese, mozzrella, and top off witht he remaining sauce. Place in the oven at 350 degrees for 30 to 40 minutes until cheese is melted and it is bubbly. Remove from oven and let stand for about 15 minutes and then cut and serve. Enjoy!
