Preparation

Step 1

Wax Paper
Ritz Crackers (regular brand with the salt)
Microwave or stovetop
Knife or spoon for spreading

Process

Spread peanut butter on one side of a Ritz cracker. Spread it kind of thick if you like peanut butter. Put another cracker on top of that to create a peanut butter Ritz sandwich. Prepare as many of these before you melt the chocolate.

Melt the Bark Chocolate coating per the instructions. Place in a decent size bowl and drop the peanut butter Ritz sandwich inside. Turn it over so it is well coated and put it on wax paper to harden. It won't take long to harden. You have to work relatively quickly with the chocolate so it doesn't harden. This is why I recommend you prepare all the sandwiches before you start working with the chocolate.

Eat

Once the chocolate is dried, you can eat these yummy treats! I stored the extras in a freezer zip-loc bag in my pantry. I didn't refrigerate or freeze them. They stayed crunchy for at least a week. This is the longest I've been able to keep them around!

Alternative

I have been informed that you can use the Ritz Bitz peanut butter cracker sandwiches that are already together and just dip them in chocolate. This would be less messy as peanut butter tends to get on your hands when you're spreading them on the cracker. I think you'll get the peanut butter and chocolate flavor much better with the larger crackers and thicker peanut butter.
