1 cup store bought roast chicken, shredded
1 cup barbecue sauce
1 12-inch pizza crust
2 teaspoon cornmeal
¼ cup chopped scallions, including most of the green part
¾ cup grated mozzarella
Place oven rack in lowest position; heat oven to 425°. Spray cookie sheet with non-stick cooking spray and sprinkle with cornmeal. Place crust on the pan and brush it with olive oil and sprinkle evenly with garlic. Bake at 425° for 6 to 8 minutes. Raise the oven temperature to 450°. Mix the chicken with ¾ cup barbecue sauce. Brush ¼ cup of barbecue sauce over the pizza crust. Scatter the chicken pieces and scallions on top of the crust. Sprinkle cheese evenly over the other ingredients. Bake for about 10 minutes, until heated thoroughly and the cheese is melted.
