Roasted Honey Dijon Potatoes

Ingredients
- 1 lb potatoes, cut into 1 inch pieces
- 1 small onion, thinly sliced
- 1/4 cup dijon mustard
- 1/2 cup oilive oil
- 1 tbsp honey
- 1 tbsp chopped parsley
- salt and pepper to taste

Step 1
Preheat oven to 375.
Mix together mustard, honey, oil, salt and pepper. Add potatoes and onions; toss to coat. Place in a greased baking pan and bake for 35 - 40 minutes or until potatoes are tender. Sprinkle with parsley and serve.
