Basil Chicken Meatballs with Ponzu Sauce

Ingredients
- Meatballs:
- 2/3 cup panko breadcrumbs
- 1/3 cup flaked sweetend coconut
- 1/4 cup chopped green onion
- 1/4 cup chopped fresh basil
- 2 tbsp sweet chili sauce
- 2 tbsp minced garlic
- 1 1/2 tsp fish sauce
- 1 1/2lb ground chicken
- 2 egg whites lightly beaten
- cooking spray
- Sauce:
- 1/4 cup lower sodium soy sauce
- 2 tbsp small basil leaves
- 1 tbsp chopped green onion
- 2 tbsp organge juice
- 1 tbsp lemon juice
- 1 1/2 tsp water
- 1 1/2 tsp mirin (sweet rice wine)
- dash crushed red pepper

Step 1
Meatballs
1) Preheat 425
2) Combine first 9 ingredients for meatballs in large bowl, shape mixture intop 16 1 1/2 inch meatballs
3) Heat large skillet over medium-high heat. coat pan with cooking spray
4) Add 8 meatballs and cook 6 min brown all sides
5) Remove meatballs
6) Arrange on broiler rack coated with cooking spray
7) Bake at 425 for 7 min
Sauce:
comvine soy sauce, basil leaves, green onion, juices, 1 1/2 tsp water, mirin, and red pepper in small bowl
Pour sauce over meatballs and garnish with green onion.
