Potato Puffs

  • 3 lbs. potatoes, peeled and quartered

  • 1 large onion, chopped

  • 3 T olive oil

  • 1 C cracker crumbs

  • 2 tsp salt

  • ½ tsp black pepper

  • 2 egg yolks, beaten


1. Preheat oven to 400o 2. Place potatoes in pot, add water. Bring to boil then reduce to medium and cook 12 - 15 minutes or till fork tender. 3. Drain, mash and allow to cool. 4. Coat a baking sheet with cooking spray. Saute onion in olive oil over medium heat till tender. 5. Add onion, cracker crumbs, salt and pepper to potatoes. Roll mixture into balls and place potato balls on baking sheet. Brush with egg yolks and bake for 40 - 45 mins, or until golden and crusty.
