Ingredients
- 2 tbsp EVOO
- 1 clove garlic, minced
- 1 cup onion, minced
- 1/4 cup green pepper, minced
- 1/2 cup red pepper, minced
- 1/4 tsp sea salt
- 1 tbsp jalapeno pepper, minced
- 2 cup dry kidney beans, cooked
- 1/2 cup reserved bean cooking water
Preparation
Step 1
Heat oil in skillet and saute onions and garlic 2-3 minutes. Add peppers and saute 5 minutes. Mash beans w/ reserved water. Add all remaining ingredients to the skillet. Saute 5 minutes, mixing frequently until hot.
