Gooseberry Pie

Ingredients

  • 4 cups gooseberries
  • 1/2 cup flour
  • 1 cup granulated sugar (scant)
  • 1/2 stick butter
  • 2 crusts for 9-inch deep dish pie pan

Preparation

Step 1

Put gooseberries in a sauce pan and cook slightly (add just minimal water to keep gooseberries from burning at first, then they will create their own juice). Don't boil, but cook until they start to break down. Cool slightly.

Thoroughly mix flour and sugar and add to the slightly cooled berries. Pour contents of sauce pan into pie crust and spot with dabs of butter.

Add top crust, create vent holes and brush with butter and sugar. Bake in 375 degree oven for 35-40 minutes.
