Ingredients
- 1 ¼ cups sifted cake flour
- 1 ½ cups sugar
- 1 ¾ cup egg whites, at room temperature
- 1 ¼ tsp. cream of tartar
- ¼ tsp. salt
- 1 tsp. vanilla
- ½ tsp. almond extract
Preparation
Step 1
Preheat the oven to 300 degrees. Sift the flour and ½ cup sugar together and sift 3 times. Set aside. Beat the egg whites until foamy, add the cream of tartar and salt, and beat until soft peaks are formed. Continue to beat until stiff peaks form, but mixture doesn’t seem dry. Beat in the remaining sugar, 1 tbs. at a time, beat well after each addition, until stiff peaks form. Beat in the extracts.
