Ingredients
- 2 cups flour
- 1/2 cup brown sugar
- 1 tbsp pumpkin pie spice
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 2 egg whites
- 1 tbsp canola oil
- 1 cup pumpkin puree
- 1/2 cup unsweetened apple sauce
- 1 medium granny smith apple, peeled, cored and diced

Step 1
Preheat oven to 400 degrees
line 12 hole muffin pan with paper cases
In a large bowl whisk flour, sugar, pumpkin pie spice, baking powder, baking soda, salt. In a med bowl, combine egg, egg whites, oil, pumpkin puree and applesauce.
Add wet ingredients to dry and stir just until moistened. Fold in diced apple. Spoon into muffin pan and bake for 16 - 18 minutes.
Yield: 12 muffins
