Ingredients
- 2 1/2 cups potato wedges
- 1 medium red bell pepper, cut into 1" pieces
- 1 cup corn kernels
- 1 small zucchini, cut into 1/2" pieces
- 4 oz. mushrooms, sliced (about 1 cup)
- 2 tsp. olive oil
- 1/2 tsp. dried Italian Seasoning
- 1/4 tsp. garlic salt
Preparation
Step 1
Preheat oven to 450 degrees Fahrenheit. Spray a baking sheet or 15" x 10" x 1" roasting pan with a non-stick cooking spray. In a large bowl, toss all of the ingredients together to coat. Spread the vegetables out evenly in the pan. Bake for 15 - 20 minutes, stirring once half way through the baking time, until the vegetables are tender and lightly browned. Serve warm.
