Ham & Cheese Baked Frittata

Ingredients

  • 6 T crisco oil
  • 4 cups frozen shredded potatoes (or 4 idaho/russet potatoes peeled and shredded)
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 lb baked ham - cut into 1/2 inch cubes
  • 12 eggs
  • 6 T milk
  • 1/2 tsp italian seasoning
  • 2 cups shredded cheese - swiss, cheddar, or monterey jack
  • salsa

Preparation

Step 1

Heat oil in skillet on med. heat, add potatoes and 1/2 tsp salt and pepper. Cook 8 minutes or until almost brown. Add ham and cook an add'l 2 to 3 minutes. Turn occasionally with spatula.

Blend eggs with milk, italian seasoning and remaining 1 tsp salt while potatoes are cooking

Place potatoes into 9x13 pan sprayed with PAM and then stir the eggs into the potatoes. Bake covered at 350 for 15 min. Remove from oven and sprinkle with cheese - return to oven.

Bake 15 min. more or until cheese melted and eggs are set. Turn oven to broil and continue to cook about 2 min. or until top is nicely browned.

Allow to cool 10 min. before cutting into 8 squares. Serve with heated salsa
