Cuban Sandwiches - Diane

Ingredients

  • 2 tsp. margarine or butter
  • 4 (8 inch) soft hero or club rolls
  • prepared mustard
  • 12 ounces sliced deli baked ham and/or turkey breast
  • 16 slices kosher dill pickles
  • 6 ounces sliced provolone and/or Swiss cheese
  • mayonnaise

Preparation

Step 1

In a non stick skillet, heat margarine over low heat. Meanwhile assemble sandwiches. Split each roll horizontally in half. Lightly spread mustard on bottom halves (about 1 ½ tsp. per roll or to taste). Top each with one fourth of the ham, pickles and cheese. Lightly spread mayonnaise on top half (about same amount as mustard). Place tops on sandwiches.

Increase heat to medium and arrange sandwiches in center of skillet. Place a heavy skillet on top of sandwich (or use a pannini grill). Cook 4 to 5 minutes or until cheese is melted and rolls are browned on both sides turning once.
