• 2 tbsp tomato ketchup
• 1 tbsp fresh lime juice
• 1 tsp Red Caribbean pepper sauce or Tabasco sauce to taste or Cayenne Pepper
• 1 tsp Worcestershire sauce to taste
• French version
• A dash of cognac
