Peanut Butter and Jelly Pancakes

- Grape Syrup:
- 1 cup grape jam or jelly
- 2 tsp cornstarch
- 2 Tbsp water
- Pancakes:
- 1 1/2 cups milk
- 3/4 cup peanut butter
- 2 1/2 cups baking mix
- 2 eggs
- canola oil cooking spray

Step 1
For syrup:
Heat grape jelly in a small saucepan over medium heat.
Dissolve the corn starch in 2 Tbsp water in a small bowl.
When the jelly has become liquie, stir in the cornstarch mixture. Simmer until a syrup consistency is reached, 5-10 minutes.
For pancakes:
Warm milk over low heat. Whisk in peanut butter and stir until completely smooth; remove from heat.
Measure baking mix into mixing bowl. Stir in eggs and milk mixture until just incorporated.
Preheat oven to 200 degrees
Put a large cast iron or nonstick skillet over medium heat. Spray with cooking spray. Put 1/4 cup pancake batter in center of skillet and cook until golden brown, 1-2 minutes on each side. When bubbles in the center of the pancake have deflated, flip over and cook on the other side. Store on a sheet tray in the preheated oven to keep warm until all pancakes have been made.
Serve with warm grape syrup
