Vegetable Brown Rice

Vegetable Brown Rice 0 Picture


  • 2 cups water
  • 1 cup uncooked brown rice
  • 1/2 tsp dried basil
  • 2 medium carrots, cut into 1in strips
  • 1 cup chopped onion
  • 9 green onions, cut into 1in strips
  • 1/2 cup raisins
  • 2 Tbs olive oil
  • 1 pkg frozen peas, thawed
  • 1 tsp salt
  • 1 cup pecan halves, toasted



Step 1

In a small saucepan, bring water to a boil. Stir in rice and basil. Reduce heat to medium low; cover and simmer for 30-35min or until rice is tender and water is absorbed. Fluff with fork.
In a large nonstick skillet, stir fry the carrots, onion, green onions and raisins in hot oil for 5-7 min or until vegetables are lightly browned. Add the peas and salt; cook 1min longer or until vegetables are tender. Stir in pecans and rice; heat through.

To toast nuts:
Spread on baking sheet and bake at 350 for 5-10min or until lightly toasted.
