Ingredients
- 2 whole skinned chicken breasts
- 2 tbsp soy sauce
- 1/8 tsp ground white pepper
- 3 tbsp cornstarch
- 1 cup chicken broth
- 1 cup (16 oz.) chow mein vegetables
- 2 tbsp corn oil
- 1/4 lb fresh mushrooms
- 3 tbsp pimento, sliced
- 1/4 cup green pepper, cut in 18 inch slices

Step 1
Slice chicken horizontally 1/4 inch thick; cut into squares. Sprinkle with soy sauce, white pepper and 1 tbsp cornstarch. Mix chicken broth, remaining soy sauce and remaining cornstarch; set aside. Drain chow mein vegetables; set aside. Heat oil; add chicken and stir fry, cook 3-4 minutes or until opaque. Stir in mushrooms, pimento, and green pepper, then stir in chicken broth. Stir constantly until broth thickens. Add vegetables and heat through.
