Granola with almond and sunflower seeds and fruit

Ingredients

  • 3 C oats
  • 1/2 C sunflower seeds
  • 3/4 C sliced almonds
  • 1 C unsweetened coconut
  • 2 tbsp wheat germ
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp cardamon
  • 1/2 C honey
  • 1/3 C olive oil
  • 1 egg white
  • 1/3 C dried banana chips
  • 1/2 C dried fruit (cranberries, blueberries, etc)

Preparation

Step 1

1. Combine all the dry ingredients in a bowl and mix well.

2. Beat the egg white until it starts to foam.

3. Heat the honey in the microwave for 30 seconds.

4. Add the egg white, honey and oil to the dry ingredients.

5. Mix well.

6. Spread as thinly as possible on a baking tray.

7. Bake at 300 for 45 minutes, or longer if needed.

8. Let cool before chunking.

9. Split the granola into two batches. Add banana to one and berries to the other.
